Frying Pans

A frying pan, also known as a frypan or skillet, is used for frying, searing and browning foods. Frying pans are shallow pans, usually with flared sides and no lid. In contrast, a pan of similar size with taller, straight or flared sides and a lid is called a saute pan. Frying pan diameters are typically in the range of 20cm to 30cm. 20cm frying pans are commonly called omelette pans, as they're a perfect size for the job. Crepe pans are even more shallow than a standard frying pan, with just a raised lip at the edge of the pan, and are best for thin pancakes. Thicker pancakes (French pancakes), scones, flatbread and pizzas can be cooked on a griddle (girdle), which is a flat pan with a thick base that's excellent for retaining heat. Griddle is also a term that can also mean grill pan. Grill pans are similar to frying pans, but usually feature a ridged base on the interior that gives a chargrilled or barbecued effect when cooking meats or vegetables.


Frying pans are made from a variety of materials - stainless steel, stainless steel and aluminium sandwich (also known as tri-ply or clad), hard anodised aluminium, cast aluminium, copper, enamelled cast iron, enamelled aluminium and enamelled steel. Frying pans often have have a non-stick coating on the interior. Construction materials have different properties, which you should consider before buying.
