Casseroles, Stewpots and StockpotsA casserole is a wide pan, usually up to 30cm diameter, with two side handles for easy lifting. Casseroles, often reffered to as dutch ovens or cocottes, are no taller than a saucepan and many types are shallow, making them perfect for serving straight to the table, rather than using a separate serving dish. Unlike saucepans and frying pans, a casserole is usually used in the oven, though initial cooking may take place on the hob. Casserole style cooking is popular around the world and there are many casserole and stew recipes. A stewpot is a type of casserole that's typically used on the hob for the entire length of cooking time, though the actual construction of casserole and stewpot types are very similar. Stockpots, though similar in design, are much taller than casseroles, and are used on the hob for making stock and cooking soups. Casseroles, stewpots and stockpots are made from a variety of materials - stainless steel, stainless steel and aluminium sandwich (also known as three-ply or clad), hard anodised aluminium, cast aluminium, copper, enamelled cast iron, enamelled aluminium and enamelled steel. A casserole dish can also be made from stoneware, and this type is generally served at the table straight from the oven. A casserole does not need to have a non-stick coating on the interior, as steam from cooking generally keeps food from burning onto the inside.
